<div class="activity-text">Nayoro city is in the northernmost band of fields in Japan. Its climate features a huge temperature swing during the summer, hot during the day, cool at night, and with low humidity. North Farm44(Nakano farm) puts this climate to good use, giving its mini-tomatoes as little mainly-organic fertilizer as possible, and using absolutely no pesticides. Its completely pesticide-free mini-tomatoes can be plucked off the vine and enjoyed as-is.<br />
You can pick and taste both the red and yellow varieties called Aiko in their clean-house greenhouses, and taste the juice derived from them. Two farm families do it all-from seeding to bottling-in making this juice-with absolutely no salt, sugar or preservatives added. The juice is so thick you have to shake the bottle upside down to get it to pour&#8211;and it&#8217;s so popular it sells out year after year.</p>

<p>Nayoro city lies in the basin of the Teshio River, a class-one river in Hokkaido, so it reaps the abundant water resources for upland farming. With the surroundings, it is the northernmost such area in Japan.</p>

<div class="activity-text">This is a half-day tour of the Nayoro city basin by bicycle and canoe on the Teshio River, Japan’s 4th longest. With its basin climate, Nayoro sees the most vivid of changes to the 4 seasons, even for Hokkaido. And cycling sure beats driving to take in this colorful show-sunflowers in the summer and drooping, golden rice ears in fall. Get off your bike on the banks of the Nayoro river and start your relaxing canoe trip. Along the way, you join the Teshio River and the forest comes up so close, you’ll enjoy natural scenery that can only be seen from the water. Your bicycle is collected by a shuttle car and a local canoe guide comes with, so even beginners and families can enjoy the adventure-no worries.</p>

<p>The Nayoro River is a tributary of the Teshio River and is 64 km long. Its salmon spawn brings fulsome blessings for time immemorial. The road along its banks is ideal for cycling.</p>

<p>The Teshio River is a class-one river with a length of 256 km (2nd in Hokkaido, 4th in Japan) and a basin area of 5,590 km2. Its headwaters are on Mt. Teshio (1,558 meters) and it empties into the Sea of Japan. With no dams in its path, the Teshio River offers a 100-mile canoe trip, the longest jaunt for canoeists in Japan.</p>

<div class="activity-text">Nayoro city is the #1 producer of mochi-rice in Japan. Nayoro alone accounts for 10% of Japan production. Japan has 2 types of sticky rice-the staple for the table and for sushi, and mochi-rice for red rice and mochi itself.<br />
If pollen drifts from one paddy to another, it changes the taste and texture. In that respect Nayoro city has been growing mainly mochi-rice since 1979, so it is of particularly high quality and is used in the best confectionary shops in Kyoto and Tokyo.<br />
The people of Nayoro have a long history of celebrations and days they get together. During the August “Nayoro Produce Festival,” some 300 kg of mochi-rice is sown. People vie to make the “most delicious, sticky mochi.” The winner becomes the master masher of mochi and receives the title “Mochi Ambassador of Nayoro.” This ambassador of Nayoro promotes mochi-rice at various events and teaches his/her secret to the people of Nayoro at different mochi-making competitions. This program entails a visit to a mochi-rice farmer and pounding some mochi with the Ambassador of Nayoro. Tasting freshly pounded mochi with various toppings is a deliciousness found only in its place of origin.

<p>Mochi is a treat eaten at celebrations, at the equinoxes, and during the New Year.<br />
Nowadays, pounding mochi at home is a luxury few get to enjoy.</p>

<p>Two varietals of mochi-rice have been bred for Hokkaido.<br />
Those named “Hakucho-mochi” taste nice and tend to stay soft.<br />
The variety “Kazenoko-mochi” is well-suited to red rice and steamed sticky-rice.</p>

<div class="activity-text">“Hoshizora Yukimi Spinach” is a top-class spinach grown exclusively in winter, which takes twice as long to grow as in summer. Its name means being raised to withstand the freezing cold, while gazing at the starry skies and snow in mid-winter Nayoro city. Taking the top gold prize at the “Vegetables Sommelier Summit” testifies to its individuality and its superior taste. Part of the root that is gently dug out of the frozen soil has a particularly dense umami and sweetness, best eaten hot out of a shabu-shabu pot. After harvest, the fields of this farm turn into a snowy field. Playing in a reserved field and tasting 100% locally grown produce dipped in a shabu-shabu inside a greenhouse-that’s a winter experience you can only get here in Japan.</p>

<p>The cold-sweetened method of cultivation works with leafy vegetables, such as spinach and Japanese mustard spinach. The leaves seem to crawl on the ground to withstand the cold, making the leaves thicker and boosting their sugar content.</p>

<p>The only time Kanda Farm uses any fuel at all is the morning of the harvest, to melt the surface of the frozen soil so the sweet roots can be dug up. Fuel is not used any other time.</p>

<p>Other ingredients for the shabu-shabu include a local, specialty pork and thin slices of mochi. Such simple ingredients are best to maximize the taste of the spinach.</p>
